In July co-founder of Le Bun Andy Taylor will open his new restaurant Carte Blanche on Hackney’s Mare Street

Taylor’s first venture into the world of food with Le Bun was born out of his love of French-American flavours and his new eatery will continue the theme by putting a US Southwestern spin on Parisian bistro classics.

Taylor says New Orleans is a huge inspiration for dishes and he drew inspiration for his menu after travelling there.

“It's one of the only places in the world that do this French-American crossover that I love,” he says.

Taylor's new restaurant merges his passion for “dirty American comfort food like burgers, fried chicken and tacos” with everything his loves about French food, including “hollandaise sauce, red wine jus and foie gras”.

Speaking exclusively to the Standard, Taylor said: “We have a fried chicken and caviar dish, which is a really interesting combination. I think it might challenge people because caviar isn’t everyone’s cup of tea but I love it and it really does work."

Carte Blanche will also offer natural wines and house cocktails, including a beurre noisette whisky sour which will incorporate butter, one of Taylor's favourite ingredients.

“We’ve got this technique where you infuse burnt butter into whisky and put it in the fridge, then your whisky tastes like caramelised butter, but all the fat is gone,” Taylor says.

Taylor says his new 50-cover Hackney restaurant will offer a stripped-back, relaxed dining experience and will boast an open kitchen for diners to see the chefs at work.

There will also be a bar area with smaller plates for those looking for a quick food and drink fix.

Carte Blanche will open its doors on July 13 and to celebrate the restaurant will be giving away free chicken and caviar on the day.
