Is it a plum? Is it a damson? No, it's chicken liver parfait.

Heston Blumenthal isn't known for his meat-and-two-veg approach to cooking – that depends, however, on how you look at it.

Meat Fruit has long been one of the three Michelin-starred chef's most iconic dishes: a ball of chicken liver parfait wrapped in mandarin gel, that is perfectly crafted to look exactly like the fruit itself, vibrantly orange, complete with leaf and stalk.

This year, Blumenthal has created a special festive edition of the world famous dish to be served at Dinner by Heston Blumenthal – shaped like a plum rather than a mandarin, and wrapped in a gel made with red wine and wintry spices.

The dish will be available throughout December on both the private dining set menu and the a la carte menu (priced at £21 individually) at his London restaurant at Mandarin Oriental Hyde Park.

The plum/parfait can be tried with a glass of 2008 Sauternes Castelnau de Suduiraut from Preignac, France, the paired wine suggested by Head Sommelier Stefan Neumann, and can even be enjoyed on Christmas Day itself, when the restaurant will be serving up a festive feast.
