Five things Fay Maschler ate this week

Our restaurant critic visits her local newish wine bar and 'curates' four chefs at Art14 London

1. At the blessedly handy (for me) Remedy wine bar, sautéed field mushrooms and Fourme d’Ambert on toast — and wine, naturally.

2. Dinner with David Queensberry, an octogenarian friend who can get food on the table quick as a cat can wink an eye. The uncompromising cod’s roe pâté features in a cookbook written with his daughter Kate.

3. Salmon Bhuzane with Green Saar at Indian Zing — a recipe from Mumbai’s Pathare Prabhu community whose nickname Sokaji appropriately translates as “one who wants to enjoy life”.

4. A first course of octopus, cannellini beans and ricotta “mustia” (smoked) at L’Anima reminds me how gifted a chef is Francesco Mazzei.

5. I “curated” four chefs for Art14 London and on Sunday thought how typically Richard Corrigan to stir mandatory kale through batter to make skeins of crispness to accompany mackerel with rhubarb and orange salad (pictured).
