The Swan

Southrop, Lechlade, Gloucestershire (01367 850205), £40.
Graham Williams, now part-time manager of London's Bibendum, and chef James Parkinson, who has cooked there, own this 14th century pub with skittle alley. The menu offers steamed wild halibut with Asian celery, ginger and spring onions and roast loin of Middle White pork with petit pois à la Française.

Trinity

Crown and Castle Hotel, Orford, Suffolk (01394 450205), £40.
Owners Ruth and David Watson seem to know more about what is happening in London restaurants than I do. Trinity is a restaurant devoted to making vibrant use of local produce and importing the best of the rest. Stylish, reasonably priced rooms, great walks by the water.

Sportsman

Faversham Road, Seasalter, Whitstable, Kent (01227 273370), £40.
As of today, bracing Whitstable, where the oyster is king, has an R in the month. At the Harris brothers' stripped-down pub out in the marshes, focus is on art and food, much of the latter bought locally. Flavours sing out from dishes such as oysters with chorizo and roast rump of lamb with boulangère potatoes.

Angel Inn

High Street, Heytesbury, Warminster, Wiltshire (01985 840330), £35.
Antony Worrall Thompson and local resident Tim Etchells, the chap behind the BBC Good Food Show, have revamped this 16th century coaching inn, installing a cool room where Scottish beef can mature before steaks are gently laid on the charcoal grill.

Leaping Hare

Wyken Hall, Stanton, Suffolk (01359 250287), £40.
God knows what havoc the recent weather has wreaked at Wyken Vineyards, but try a previous vintage at the attractive restaurant housed in a 400-year-old barn on the estate, which also has gardens, woodland walks, a country store and farmers' market. To take advantage of all those along with Nick Abrams's modern menu based on local produce, go for lunch.
