Le Gavroche lunch box: a recipe inspired by Michel Roux Jr's Michelin restaurant

For a lunch box friendly version why not try black pudding on sourdough toasts with a tomato and asparagus chutney. For this simple lunch box buy the best quality ingredients you can. Michel believes in letting ingredients shine in cooking and treating them with respect. With a few minutes preparation and cooking using fine ingredients you can create a gourmet lunch box for yourself, one that even Michel would approve of.

Ingredients

1 tbsp. olive oil

½ small red onion

1 clove garlic

1 tbsp. red wine vinegar

A pinch of paprika

2 very ripe tomatoes

2 asparagus spears

3 – 4 slices best quality black pudding

2 slices sourdough bread

Sea salt, cracked black pepper to season

Method

Peel and thinly slice the onion and garlic. Heat the olive oil in a frying pan over a medium heat and gently sweat the onion until soft and sweet with a generous pinch of salt and pepper. Add the garlic for the last minute of cooking. Break off the woody ends of the asparagus and discard, finely slice the tips. Dice the tomatoes. Add the asparagus and tomatoes to the onion and garlic with the red wine vinegar and paprika. Continue cooking until the tomato has broken down completely. Leave the chutney to cook on a gentle heat while you grill the black pudding until it is crispy. Lightly fry the sourdough in a frying pan over a medium heat until golden brown on both sides. Adjust the seasoning of the chutney when cooled, if needed. Assemble your lunch box by spooning the chutney onto the sourdough toasts and crumble the crispy black pudding on top. Bon appétit.
