This Mexican style soup is excellent for using up your left-over Thanksgiving turkey. The garnishes can be scattered on top before serving or served alongside for your guests to help themselves.

Ingredients (serves 5)

1 tablespoon coconut oil

1 large onion, peeled and finely chopped

6 fat cloves garlic, peeled and finely minced

2 stalks celery, finely chopped

1 large carrot, peeled and finely diced

1 large red pepper, deseeded and finely diced

1 teaspoon each of cayenne pepper, dried oregano, chilli powder, ground cumin, ground coriander and smoked sweet paprika

1 tablespoon tomato puree

1 x 400g tin chopped tomatoes

750ml vegetable or chicken stock

1 cup frozen sweetcorn

1 x 400g tin black beans, drained and rinsed

250g leftover roast turkey, chopped

2 bay leaves

Small bunch coriander

Himalayan pink sea salt and freshly ground black pepper

To garnish

Your choice of tortilla chips, lime quarters, chopped avocado, crumbled feta cheese, chopped tomatoes, finely chopped red onion, chopped coriander leaves

Method

Remove the coriander leaves from the stalks and put to one side, finely chop the stalks.

Melt the coconut oil in a large saucepan and add the onion, garlic, celery, carrots and red pepper and cook for 5 minutes until softened. Increase the heat to high, add all the spices and cook for 2 minutes stirring constantly to make sure they don’t catch on the base of the pan. Turn the heat down to medium, add the tomato puree and cook for another 2 minutes, stirring constantly. Pour in the tin of tomatoes along with half a tin of water then bring to the boil and simmer for 5 minutes until the mixture thickens a little. Now add the chicken stock, sweetcorn, black beans, turkey, bay leaves and coriander stalks. Bring back to the boil and simmer for 20 minutes. While the soup is simmering you can chop your selection of garnishes.

Remove the bay leaves and season to taste with salt & pepper. Ladle into deep bowls and serve with the garnishes on the side for your guests to help themselves.
