A four day weekend creates a lot of potential for hangovers. So make sure your kitchen cupboard is prepared for you to knock up a jug of two of Bloody Mary - it will be like your own bottomless brunch.

L'Escargot Bloody Mary

Ingredients

Tomato Juice (225ml)

Fresh grated horseradish

Worcestershire sauce (10ml)

White pepper (pinch)

Tobasco (5 drops… ask if they want it spicy- if so just add more!!)

Fresh lemon juice (juice of 1/2 a lemon)

celery salt (pinch)

Vodka (35ml)…. from France of-couse so we use Grey Goose!

Method

Muddle all ingredients over ice

Celery stick to garnish

Serve in highball

The Richmond Bloody Mary

The Richmond's Bloody Mary

Ingredients

2 Yellow mustard seeds

1 Black onion seeds

2 Black peppercorns

2g Maldon rock salt

1g Celery seeds

1 Red chilli

1 clove garlic

4 leafs - Basil

2 leafs - Parsley

1 Celery stick

70ml Port

10ml Maury

650ml Worcester sauce

9 dashes Red Tabasco

Method

Add all ingredients into blender to create our "Mary mix"

2kg Chopped tomatoes

350ml water.

Add all ingredients into blender to create our Fresh tomato juice. We then pickle our celery sticks in our 'Richmond' pickle brine.

Then add the 25ml of Mary Mix to the fresh tomato juice, and add 50ml Vodka. Add all ingredients into cocktail shaker. Fill with ice and roll through very briefly.

Ingredients (makes 1 litre)

200ml lemon juice

350ml Worchester Sauce

1 tbl spoon HP sauce

2 tbl spoons English Mustard

1/2 tbl spoon BBQ sauce

20 ml Tabasco

1 tsp celery salt

2 tsp ground black pepper

1 piece of horse radish root

Method

Blend all ingredients together

Bottle and store in fridge ready for your guests. To make one Bloody Mary, combine 50 ml of Special Bloody Mary mix to 50 ml of Vodka - we like Belvedere - topped with fresh tomato juice and a stick of celery.
